
Ingredients:
2 tbsp olive oil, divided
1 shallot, thinly sliced
4 medium eggs
100g feta cheese
salt, pepper, chili flakes
thyme, basil or oregano
1/2 punnet of pea shoots
1/2 punnet of basil microgreens
50g boiled peas
Instructions:
Step 1:
Crack the eggs into a bowl and whisk them along with the feta until frothy.
Step 2:
Add salt, pepper, chili flakes, and herbs for taste. Mix well.
Step 3:
Add 1 tbsp of olive oil in the pan, and heat until sizzling.
Step 4:
Pour the omelet mixture into the hot pan, cover it with a lid, and leave to cook on medium heat for 3 to 4 minutes.
Step 5:
Sprinkle pea shoots evenly on top of the omelet.
Step 6:
Cover again with the lid and leave to cook for an additional 6 to 7 minutes.
Step 7:
When cooked, remove the omelet from the pan and leave to cool slightly before sprinkling with the basil microgreens and peas.
