
Ingredients:
4 slices of bread, wholemeal seeded
6-8 slices of grilled tofu
4-6 tbsp of hummus
50g shredded salad mix
1 punnet of fennel microgreens
Instructions:
Step 1:
Spread hummus generously on a slice of bread.
Step 2:
Place tofu slices in waves on 2 slices of bread. Top with micro-fennel.
Step 3:
Cover with another slice of bread and it is ready to serve!
