Spicy Thai-Style Relish by Jireh

Ingredients:


Relish:

1 red onion, or 2 large shallots, finely sliced

Juice of 1 lemon

3 cloves of garlic, finely sliced.

5 birds eye chillis, de-seeded and finely sliced

1 tbsp soy sauce

1/2 fish sauce

2 tbsp honey


Salad:

1 punnet of basil leaves

2 punnets of green mustard (or microgreens of your choice)

400g seafood



Instructions:

Mix all ingredients together and set aside in the refrigerator for at least 1 hour. The onions will lose most of their piquancy and develop a sweetness.


Step 1:

Blanch the seafood in boiling salt water until it is cooked. Drain and dry.


Step 2:

Arrange the seafood at the bottom of the bowl and top with the leaves.


Step 3:

To serve, ladle the relish and toss.
