If you have family, friends, or especially kids, who struggle to eat vegetables, then this spinach pasta (or spinach pappardelle) is a good alternative than to typically just having vegetables on the side.
Not only will this recipe add color to your pasta, and give it a nice looking texture, you won't even feel the spinach as you eat it! Again, great if you have kids who hate vegetables.

Ingredients:

50g - Spinach
2 (whole) - Eggs
200g - All-purpose flour (plus extra for kneading)
Sauce:
4 cloves, minced - garlic
75g - Unsalted Butter
Instructions:
Step 1:
Put the spinach into a bowl and pour boiling water over it until wilted. Allow to cool, then squeeze water out from spinach (feel free to keep this and add to a spinach smoothie or any dishes)
Step 2:
Put spinach and eggs into a small food processor and whizz until smooth. I found that my spinach didn't blend well so I had to chop it up manually before mixing it with the egg
Step 3:
Add half flour and a pinch of salt and pulse until it comes together as a dough. Slowly add in the remaining flour as you pulse, but stop when the dough stops sticking to the food processor.
Step 4:
Tip dough out onto a lightly floured work surface and knead for 10 minutes or until smooth, adding extra flour until if it's too sticky. Cover and chill for 30 mins
Step 5:
Roll the pasta out onto a work surface until you can almost see your hand through it, then cut into strips (thickness as you like). I recommend working on the dough in quarters if you have a small workspace.
Step 6:
Put butter in a frying pan and cook with garlic until it starts to turn brown
Step 7:
Cook pasta in a pot of boiling salted water for 3 minutes or until al dente. Then add pasta to the sauce and cook for a minute.
Step 8:
Divide accordingly and serve

Closing:
If you're cooking for just yourself then just cook a quarter of the pasta, but maybe consider making more as I promise you that you'll be wanting seconds!
The spinach is not overpowering at all so feel free to add more if you desire.
Add in some spinach water while making the sauce if you want a lighter sauce.
