I had my doubts when I started making this recipe. I'm usually only a fan of vegetables when it's roasted or spicy (eg, sambal kangkong), so I was pleasantly surprised when this came out amazing on my first try!
If you enjoy omelets, then this dish is really for you! The crunch of the watercress complements the softness of the egg, and the flavors blend really well together.
If I had to give this a rating out of 10, I'd give it a solid 7. It's something I'd make again, as well as order from the Zi Char store if it were on the menu.

As mentioned, watercress and pancakes are the main components. So do make sure you have good quality ingredients if you want your food to taste good too!
The rest of the sauces complement the dish so they aren't as important but of course, a good quality input will equal a good quality output.
Ingredients:
3 cups - Chopped watercress
1 cup (about 5) - Eggs
1 tbsp - Tapioca flour
1/4 tsp - Salt
1/4 tsp - Pepper
1/2 tbsp - Oyster sauce
1/2 tbsp - Light soy sauce
1/2 tbsp - Neutral oil
1/4 tsp - Sesame seed oil
1/2 cup - Fresh milk
Instructions:

Step 1:
Rinse your watercress and chop it up into 1-2cm chunks.
Step 2:
Crack eggs into a bowl and whisk in half of the salt, pepper, oyster sauce, light soy sauce, sesame seed oil, neutral oil, and the milk (save the remaining half for the watercress)
Step 3:
Before adding in tapioca starch, sieve and mix it thoroughly with the remaining half milk first (I found it won't mix well directly with the eggs). If you still have clumps of flour, use a mesh strainer to sieve it out.
Step 4:
Mix the remaining half of the ingredients with vegetables and then mix the eggs in after.
Step 5:
Heat about 2 tbsp of neutral oil in the pan, and slowly spoon over 5 scoops of the egg mixture to form a base layer in the pan. Then after 15 seconds, when it starts to cook, pour in the rest of the egg mixture, cover, and cook over low heat.
Step 6:
After 10 minutes, or when bottom browns, flip over and cook for 4 - 5 minutes till fully cooked through.
Step 7:
Cut into 8 pieces and serve! Goes well with rice or just by itself!
